Amaranthus is a show-off and a glutton. By that I mean they easily become a focal point in the garden or a bouquet. It is bold and beautiful, sometimes reaching five feet in one season. And it wants lots of sun, lots of water and gentle handling. It can never get enough. But it's worth it. Almost all of this plant is edible (in modest amounts) and has been used in brewing beer. Historically Amaranth was used to dye fabric. Today it's sought for its beautiful texture and outstanding color.
