The main focus of this dessert is to centre the attention on the use of beeswax. Typically not something you would consider as a food item, we use it mostly as an infusion in tandem with the idea of offering a wider spectre of the resources that the honey bee offers humans. Aligned with our concept of food waste there is literally nothing wasted on this dish, from fruit peels to walnut shells, everything finds a way or another to feature on this classic pairing (pear, walnut & honey) with a twist.
