Homemade vegan pad thai and gyoza. Pad thai has become one of my favorite dishes to make and is very easy to do. I make mine using spinach instead of bok choy and add broccoli and whatever other vegetables make me happy. I created this recipe using multiple sources from the internet that I modified with time and experience. I now make this in batches 3-4 times the size of the original recipe and have it down to a science. The gyoza were store-bought this time, but they are an excellent addition to this meal. Often times, a portion of the chopped veggies can be set aside and wrapped for gyoza.
