At the beginning of this year, my partner and I culminated a long trip with living in San Cristobal de las Casas, Chiapas for 3 months. Every morning we would wake up and go to a colorful vegetarian restaurant offering flavoury dishes and vegetable juices to fuel our work day. I had never experienced the town as both a foreigner and a local and it allowed me to understand why many people from other countries have a place in their heart for that slow-paced crafty and cute hippie town hidden in the cold mountains. You need to be like a tourist in your own country at least once in your lifetime.
