Locro de papa is a traditional dish of Ecuador. It is a potato based soup served with cheese and avocado. In the back of the Locro is a Empanada de Viento (fried cheese empanada) a traditional street food of Quito-Ecuador - they are filled with cheese, fried until crispy, and served with sugar.
