In a small Albanian village near Struga in Macedonia, our family gathers around for a meal prepared by our mother. On this occasion, two of my sisters have joined us during their extended visit. Using a fireplate in accordance with traditional methods, a pastry dish is cooked by flame, charcoal and covered with ash, imparting a heavenly scent and texture to what we call “petlla”. Served with natural yogurt, eaten outside under the shade whilst tending to the bubs, we savor the occasion … until next time.
