To re-kickstart my blog in 2017, I came up with 365 daily “recipe prompts” to give some boundaries for my creativity. Day 8 prompt: carrot. With which I thought it would be lovely to create a flourless cake. Something light and simple, in line with healthy New Year’s eating goals. Two hours later, I ended up with this bad boy. A flourless carrot cake, no doubt. But topped with bourbon syrup, Luxardo cherries, poached pears and pomegranates and pansies and mascarpone whipped cream. Le sigh.
